Colonial sites include the lovely Plaza Mayor, the Government Palace, San Francisco Church and the exquisite Torre Tagle Palace modern day seat of the Ministry of Foreign Affairs. In modern Lima, drive along the exclusive residential areas of Miraflores and San Isidro. Continue to the Larco Museum, founded in 1926, it displays remarkable chronological galleries providing an excellent overview on 3000 years of development of Peruvian pre-Columbian history. Located in a unique vice-royal mansion of the 18th century built over a 7th century pre-Columbian pyramid is surrounded by beautiful gardens. The Larco Museum also features the finest gold and silver collection from Ancient Peru and the famous erotic archaeological collection, one of the most visited Peruvian tourist attractions.

After the tour enjoy lunch at Amaz Restaurant: The Amazon is one of the areas with the greatest diversity and biological wealth on the planet. Much of its pantry has not been promoted in a sustained manner in contemporary cuisine worldwide. ÁmaZ was born with the purpose of bringing to the world the gastronomy, culture and supplies of the Amazon region with a contemporary approach that seeks to spread and preserve our pantry.

Return to the hotel for an afternoon at leisure.  This evening we shall enjoy dinner at Astrid y Gaston: Each season Astrid & Gastón surprises its regulars with novelties in addition to the classical and notable dishes on its menu. Haute cuisine, great service and outstanding creativity characterise its style, which blends original ingredients, delicious innovations and aromas reminiscent of Peru's fine gastronomy. A contemporary classic always popular because of the originality of each of Gaston's creations, Astrid's exquisite desserts and an extraordinary combination of flavours, ingredients and customs that make it unique.  Return to the hotel.

Return to the hotel for an afternoon at leisure. This evening we shall enjoy dinner at Central Restaurant. Conscious of the lack of connection, we want to humbly take on the great challenge of getting to know and, in some cases, getting to know again this beautiful country replete with unique ingredients, landscapes, culture, tradition, and history, but above all those that live there and tell about them. Our collaborative team works hard to create links, and tries to make visible those elements that in daily life not everyone can see. The expedition we undertake has no destination or end, but centers on the constant movement in the observation and the respect of the temporality and the seasonality that Earth dictates.

Photo: Caballo de Paso Horse Show

Day 4: Lima - Pachacamac Temples and Peruvian Paso Horse Show

After breakfast, you will be driven along the Pan-American Highway with its views across the beautiful Pacific beaches will take you years back.  Visit to the pre-Inca ruins of Pachacamac considered by many to be the most important archaeological site near Lima. Four hundred years before the Incas, the Ishmay culture developed a major ceremonial center, featuring streets, dozens of temples fitted with ramps and the Painted Temple.

After lunch watch a delightful demonstration of the skills of the Peruvian Paso horse, a unique member of the horse kingdom. “Caballo de Paso” known worldwide for their smooth gaited movements and unusual spirit. No other horse combines strength, intelligence and beauty as perfectly as the Peruvian Paso Horse. The particular characteristic of the Paso Horse is precisely the reason for its name: the sublime charm of its typical step. As it walks, its front legs step very high and forward while the hooves sway to the sides in a graceful and synchronized movement.

Return to the hotel and freshen up. This evening we shall enjoy dinner at Maido Restaurant. Life is movement. Nothing is static or absolute. No one is. We are in a state of constant flux, just like the Earth, the tides, bacteria, light, the blood in our bodies, colors, seeds. Like family trees, cuisines are constantly being redefined, their identities enriched by an intense intercultural exchange which has formed the basis of all civilization ever since humans shared their first sounds, products, ideas, and customs. Fusion cuisine is just that: cooking, an inclusive word that perfectly encompasses it all. The fireplace is where bloodlines merge, where people come to sing, individual and group histories are forged, life gestates. The fireplace is where dialogue is fostered, the elements meet, opposites attract. Thus was born Peruvian Nikkei cuisine: from a complex history called Peru; and another, equally complex, far-off and foreign history called Japan that merged to live in harmony and create the third reality: Nikkei Cuisine.

Day 6: Sacred Valley - Pisac Market and Ollantaytambo Archaeological Complex

Breakfast at the hotel. Meet your guide in the hotel lobby then depart for a Full Day excursion visiting Pisac Indian Market and the Ollantaytambo Fortress.

Enjoy a drive through the fertile countryside of the Urubamba Valley to the colonial village of Pisac where a unique Indian Market takes place daily. The variety of products offered is overwhelming, from pottery with reproductions of archaeological pieces, to all kinds of textiles, jewelry and Peruvian handicrafts. During your visit to this bustling marketplace you will have the opportunity to bargain with the artisans and indigenous traders. Grab the items you like, you will hardly see the same one again.  Lunch is served at Hacienda Huayoccari - The most noticeable aspect of the house is its sensational setting, dominating the Urubamba valley in the midst of the highland crags and vegetation through which the river flows. Above it, on the very mountain top within sight of heaven are two lakes, which seem to seethe on a rainy night. With magnificent views of the Urubamba River, the Casa-Hacienda has the magical ability to make us forget the reality of life. Today’s lunch will be a remarkable event.  Afternoon visit to the Ollantaytambo archaeological complex, the Incas built it as a fort that included a temple, agricultural terraces, and an urban area. There are two distinct sectors: The religious and worship zone, and the residential area. Ollantaytambo was an important administrative center with probable military functions if one considers the walls and towers. There are also traces of ancient roads and aqueducts. The town of Ollantaytambo is called a "Living Inca Town" since the inhabitants maintain very old practices and customs.

    Return to the hotel.

Overnight: Sol y Luna Hotel, Deluxe Casita

    Meals: Breakfast & Lunch

Day 7: Sacred Valley - Moray Terraces and Maras Salt Pools

Breakfast at the hotel. Meet your guide in the hotel lobby then travel through unspoiled and picturesque Andean communities on your way to the Incan agricultural experimental center of Moray, famous for its sunken amphitheater, made up of four circular terraces, which appear to fade away into the earth like an artificial crater. The site was apparently an Inca agricultural research station filled with fertile earth and watered by complex irrigation systems, designed for experimenting with crops at various altitudes (some of which run down to depths of 100 meters).  Continue to the impressive Maras salt pools formed by water emerging from a lake inside a mountain in the Urubamba Valley. An amazing view of evaporating ponds for the extraction of salt. Learn about ancestral techniques, which are still used, in agricultural, irrigation and salt-recollection tasks, as well as in Andean festivals and rites.

After the tour, enjoy lunch and Cooking Lesson at Tawa Restaurant. In Yucay, located in the heart of the Sacred Valley, Tawa Restaurant offers an exclusive gastronomic experience with excellent service in a warm and natural environment. Archaeologists believe that the Inca "Virgins of the Sun" took refuge from the Spanish Conquistadors here.   This evening enjoy a tasting Dinner at Sumaq. Our chefs Carlos Pardo Figueroa and Ribelino Alegría are great connoisseurs of the flavors that are hidden by the Apus (mountains); they have rescued many of the fruits of the land that had been forgotten by the Peruvian tables for centuries. Thanks to their work promoting crops in high Andean communities located at more than 12,139 feets and to the researching of new products that are fused with contemporary culinary techniques, they’ve given birth to our new tasting menu, Flavors of the Andes: Apucc Mikhuna (which in Quechua means the food that the mountains bring us).

From the Andes to your table... The tasting Menu, Flavors of the Andes: Apucc Mikhuna, revels in an exquisite and rich list of native ingredients that have originality and history.
